Stir Fried Veat with Black Bean Sauce

Serves 4
    1 packet Veat Chicken Flavor Bites, 1tbsp light soy sauce, 1 1/2 tbsp Shaoxing rice wine or dry sherry, Salt & Sugar to taste, 1 tsp seasame oil, 2 tsp cornflour, 2tsp cornflour, 2 tbsp groundnut oil, 1 tbsp finely chopped fresh root ginger, 1 1/2 tbsp coarsely diced garlic, 2 tbsp finely chopped shallots, 31/2 tbsp finely chopped spring onions, 2 1/2 tbsp coarsely chopped salted black beans, 150ml/5fl oz classic Chinese stock or good quality bought stock.

Put the Veat Bites ina abowl and mix with soy sauce, rice wine or sherry, salt, sugar, sesame oil and cornflour. Heat a wok over a high heat, then add the oil. When it is very hot and slightly smoking, and the Veat Bites and stir-fry for 2 minutes. Finally add the stock. Bring the mixture to the boil, then reduce the heat, cover and simmer for 2 minutes. Garnish with the remaining spring onions and serve.
