Fried Paratha Noodles

Serves 5
Ingredients
    5 pcs Kawan Paratha, 80g Prawns, shelled, 3 tbs Cooking Oil, 1/2 Onion, diced, 1tbs Ginger, minced, 2 tbs Spring Onion, chopped, 4 cloves Garlic, finely chopped, 6 stalks Kuchai Leaf (Chinese Chives) cut into 1 1/2 inch length, 60g mixed vegetables (Peas,Carrot and Corn), 80g Bean Sprouts, 1 tsp Thick Black Soya Sauce, 1 tbs Chilli Sauce, 1 tbs Tomato Sauce, 2 tsp Curry Powder(for meat) 2 Eggs - beaten, salt to taste, pepper to taste.
Method

Pan Fry Paratha as per cooking instructions on packaging. Cut the fried Paratha into strips measuring 1cm wide. Set aside. Fry garlic, diced onion, leeks and minced ginger with oil in a preheated pan until fragrant. Pour in beaten eggs and stir-fry until fully cooked. Add prawns, mixed vegetables, curry powder, chilli sauce, tomato sauce and salt & pepper to taste. Once the prawns are cooked, add the Paratha strips kuchai leaf and bean sprouts. Stir-fry and mix-well. Transfer onto a plate, garnish with chopped spring onions and serve while hot.
